Ingredients
  

  • 4 6oz boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 tbsp lemon juice (roughly 2 lemons squeezed)
  • 3 garlic cloves (minced)
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 zucchini (sliced)
  • 2 bell peppers (chopped)
  • 1 red onion (sliced)

  • Baking sheet
  • Mixing bowls

Method
 

  1. Preheat oven to 425°F
  2. Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper
  3. Coat chicken with half the marinade
  4. Toss vegetables with remaining marinade
  5. Roast vegetables for 25 minutes
  6. Grill chicken 6 to 7 minutes per side
  7. Rest chicken 5 minutes
  8. Serve with vegetables
