- Preheat oven to 425°F
- Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper
- Coat chicken with half the marinade
- Toss vegetables with remaining marinade
- Roast vegetables for 25 minutes
- Grill chicken 6 to 7 minutes per side
- Rest chicken 5 minutes
- Serve with vegetables
Notes
You can also slice the chicken breast and serve mixed together with the vegetables.
