Ingredients
  

  • 1 lb lean ground turkey
  • 2 medium sweet potatoes diced
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 2 cups spinach
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp pepper

Equipment

  • Large skillet
  • Knife
  • Spatula

Method
 

  1. Heat oil in skillet
  2. Cook onion and garlic for 3 minutes
  3. Add turkey and brown fully
  4. Add sweet potatoes and spices
  5. Cover skillet and cook for 15 minutes
  6. Add spinach and stir until wilted
  7. Rest 5 minutes and serve

Garnish ideas: shredded cheese, creamy cheese sauce, sliced jalapeños, diced avocados, fresh cilantro, creamy chipotle sauce, sour cream
