Black Bean Avocado Tacos

Ingredients
  

  • 8 corn tortillas
  • 1 can black beans drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp cumin
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • 1 avocado diced
  • 1 cup shredded lettuce
  • 1 tomato diced
  • ¼ cup red onion diced
  • 1 lime cut into wedges
  • ¼ tsp salt

Equipment

  • 2 Skillets
  • Mixing spoon
  • Knife

Method
 

  1. Heat olive oil in a skillet over medium heat
  2. Add black beans, cumin, chili powder, garlic powder and salt
  3. Cook 5-6 minutes, stirring occasionally
  4. Warm tortillas in a dry skillet or microwave
  5. Fill each tortilla with bean mixture
  6. Top with avocado, lettuce, tomatoes and onions
  7. Squeeze fresh lime juice over tacos
  8. Serve and enjoy
